20 minute Broccoli & Quinoa

This is such an EASY recipe, that genuinely can be cooked in just about 20 minutes! Grab these pantry staples or add them to your next grocery order:

Vegetable Stock, Quinoa, your fave cooking Oil, quarter-to-half Onion, as many cloves as you like of Garlic, 1-2 heads of Broccoli, 1 can White Beans, and some grated Parmesan Cheese to your liking.

Use a 2:1 ratio to cook your quinoa. Add stock and quinoa to a pot, bring to a boil, and simmer for 12-15 minutes.

While quinoa cooks, dice your onion, mince the garlic, chop the broccoli, drain and rinse your beans.

Add oil to a LARGE skillet pan. Throw in your onion. Once onion begins to turn translucent, add garlic. Once garlic browns (just a little) toss in the broccoli. Cover you pan and allow broccoli to steam for 3-5 minutes. Mix in your rinsed beans and cook, uncovered, for 2-4 minutes. Remove from heat. Add the quinoa once liquid is gone. Stir in your cheese.

Add a salad or fresh chopped garden veggies, a fat source (Greek yogurt pictured) and VOILA! You've got a delicious meal cooked in less time than a Paw Patrol episode.
